The Macallan
Production Process
Macallan’s production process is a

raw material. The barley is then malted, a process that involves steeping and
germinating the grains to develop their complex flavors.
After
malting, the barley is dried and then milled into grist, a coarse flour-like
consistency. The grist is then mashed with hot water to extract its sugars,
which are then fermented by yeast. This fermentation process converts the
sugars into alcohol, creating the foundation for the whisky.
The resulting wash is then distilled twice in copper pot stills, which
are still the preferred method for producing single malt whisky. The first
distillation produces a low-strength spirit, which is then distilled a second
time to concentrate the flavors and alcohol content.
The new
make spirit is then transferred to oak casks, where it will spend years aging
and maturing. Macallan uses a variety of casks, including American and
European oak, which impart their unique flavors and aromas to the whisky. The
length of aging can vary from a few years to over 50 years, significantly
